- 1 Whole Chicken Quartered
- 1 Cup Lite Brown Sugar
- 1/2 Cup Extra Virgin Olive Oil
Use medium mixing bowl to blend Lite Brown Sugar, Caribbean Spice Blend @ Extra Virgin Olive Oil. Reserve half of the mixture for basting via grill (see below).
Toss the chicken in mixing bowl, and make sure the quarters are completely covered with thick application.
Preheat grill to Medium/High temperature. Grill chicken, and baste with reserve mixture throughout the process, until done.
The internal temperature of the chicken should be above 165 degrees. Add a dash of lime. Jerk chicken complete.
